To make at home, the blueberry pancakes that are a traditional New Year's treat in my family, with blueberries we picked and froze the previous summer.

Our Sunday morning ritual is Hugh making Maple Grove Farms buttermilk pancakes with either real Vermont maple syrup (I know the guy who makes it) or Maine blueberry syrup.

My dad's buckwheat pancakes based on a recipe by his father.... after you eat one you feel about 15 lbs. heavier and ready to move a mountain (in more ways than one, if you know what I mean)!

My favorite is pouring a the batter (preferably buttermilk) on the hot griddle and letting one the bottom side cook up nice and golden and letting the top side warm up and cook just enough to cook the egg in the batter, but leaving the top side warm and gooey - then you fold it like a taco and eat it with the warm gooey *just cooked* insides together.

It makes the pancake experience so moist and delectable, with very complex flavors (without having to add extras.) Simple, but yummy.

My mom used to make homemade chocolate chip pancakes EVERY Sunday, and we'd freeze them in baggies in pairs for a quick throw in the microwave during the school week. Technically, each baggie had one cake for me, and one for my brother, but one day he didn't come down for breakfast, and I was left with an extra cake. Would I put syrup on it, and have a little more? Throw it back in the freezer for tomorrow? Well, I had a track meet that afternoon and knew that I could use a little extra energy, so I ditched the syrup, pulled out the vanilla bean ice cream, and made a chocolate chip pancake ice cream sandwich. The warm pancake and melty vanilla was... delicious!!

...and I broke the school record for the 800 meters that afternoon!! THAT is what i call powered by pancakes :OD

Gran's South African pancakes with Karo corn syrup. I'm not really sure if the recipe is much different from your standard, home-made cakes, but it's all the technique.

They get cooked 'conventionally' in a medium-heat pan, and finished in a searing hot one for a few seconds. It gives them a nice crust without any charring.

My mother's pancakes are the BEST! They're super-thin, just slightly thicker than a crepe, and cooked in lots of butter which causes the thin edges to get really crispy. Then she'd serve me three at a time, rolled up, and sprinkled with powdered sugar. Even now, it's my favorite way in the world to eat them.

Without a doubt, Turkey Pancakes. A family tradition that goes back 30 or so years. Every Thanksgiving (minus the few spent in the bitter cold at the Macy's parade), my dad would cook up a batch of his famous turkey pancakes- Aunt Jemima pancakes in the shape of turkeys. At least, they always looked like turkeys to us. One pancake for the body, one for the head, 4 or so for the tail, decorated with bananas, whipped cream and sprinkles. The crowning touch was always the special little 'trail' or chocolate chips strategically placed under the turkey's bum. Dad passed away about 8 years ago, and now I make turkey pancakes for my fiance, or when we spend the holidays with my family, we make them for my nephew. And of course, for us.

I had a fabulous sort of enormous deep-dish buttermilk pancake a while ago, served with deeply carmelized apples (to the point where my teeth kept gluing together). Sadly, the local place that served it stopped doing brunch and went dinner only. Alas.

The best pancake dish in the entire world would be bacon pancakes at the Original House of Pancakes in Atlanta, GA. Tender, fluffy pancake studded with savory, chewy bites of bacon... drizzled in maple syrup to soften the whole thing... mmmmm!!!!

I'm an old fashioned gal who likes her pancakes the old fashioned way: a plain cake and maple syrup...heavy on the syrup.

Bittman's whole grain pancakes (involves fluffy egg whites, wwheat, buckwheat, cinnamon, cardomom) with blackberry syrup (frozen blackberries boiled in a cup of real maple syrup) and mounds of creme fraiche! yumtastic.
