Cook the Book: 'Big Bob Gibson's BBQ Book'

20090831bigbobgibsonsbbqbook.jpgLabor Day is just around the corner, which means the last hurrah of summer barbecues. We thought this week would be the perfect opportunity to feature Big Bob Gibson's BBQ Book, a cookbook from the barbecue legend Big Bob Gibson.

Here's a little background on Big Bob: Bob was a big guy from Decatur, Alabama, with a natural talent for grilling. Back in 1925 he started serving barbecue out of a pit he dug in his backyard. People flocked from miles around, and his backyard barbecue eventually become so popular, he was able to quit his railroad job and open up a brick-and-mortar restaurant.

Since then Big Bob's has become a barbecue institution, with locations throughout Alabama and the Carolinas. Big Bob's has always been a family affair so it's no surprise that Chris Lilly, husband to Big Bob's great-granddaughter and winner of multiple barbecue competitions, chose to share some of some of the Gibson family's barbecue secrets in Big Bob's BBQ Book.

The book offers tons of invaluable barbecue wisdom especially for novices like myself. Different types of grills and woods are broken down, seasonings are discussed and cooking methods are explained in a straight-forward style. If you've ever wondered about direct versus indirect heat methods, Chris Lilly is your go-to guy.

If you've been to Big Bob's you'll surely be familiar with his Bar-B-Q Chicken with White Sauce and Bar-B-Q Coleslaw. We're going to be sharing those secret recipes and more, along with some great Southern sides such as Big Mama's Chow-Chow and Turnip Greens with Smoked Slab Bacon.

Actually, the best BBQ I have ever eaten was Big Bob Gibson's!

I can't help but love Texas Brisket!

The best barbecue I ever had was from a restaurant back home in Vancouver called Memphis Blues -- Cornish game hen, served with a side of beans, cornbread, and their classic BBQ sauce. Without fail, I'm at that restaurant every time I'm home for a visit.

Strangely enough, I have not had much great BBQ - it could be where I live. I did go to Rendevous in Nashville, but I was so young I don't remember. Most of the BBQ here in Tucson are chain restaurants or are not consistent at all.

In Memphis, a friend of our host had spent many many hours making his own barrel-style barbecue. It was huge and mounted on a trailer. He made us some really exceptional pulled pork. and his own sauce.

Nothing beats a real deal pig pickin back home (Raleigh NC). Ole Time would have to be my joint of choice.

NYC-wise, I'm a fan of the pork belly at Fette Sau.

If you're in central NC, Allen & Son near Hillsborough is the best of the best. I go whenever I can.

Other than my homemade bbq, of course - Boston butts smoked over hickory.

I was at Sonny Bryan's in Dallas the day after Julia Child had been there. The first taste told me that Julia knew her brisket.

The best BBQ I had was Dinosaur BBQ in western NY. Their brisket is the best. Although I just moved to NC, so I may find something better.

Best BBQ I ever had was prepared at my house by a good friend from NC.

I have limited barbecue eating experience, but Armadillo Willy's in the SF bay area always hit the spot.

My dad and I were planning a baseball trip over a summer, and we wanted to fit as many games into two weeks as possible. We just couldn't make a doable schedule that had the Royals in town, unfortunately. We finally decided, baseball be damned, we were going anyway. We flew in, had a platter with everything at Arthur Bryant's , then made our way over to Gates for burnt tips as lunch #2. The trip had us at 13 baseball games and eating in some fine places, but nothing could touch the smoked sausage at Arthur Bryant's.

I've done my share of barbecuing and eaten a lot of it all over the country, but a couple of years ago I finally made the roadtrip to Mike Mills' 17th Street Bar and Grill and it was like a religious experience! Hands-down the best ribs I've ever had.

The best barbeque I've ever had was from Oklahoma Joe's in Kansas City, KS. For a BBQ lover from the northeast, there is nothing like that first bike of real Kansas City bbq'ed brisket served out of the back of a gas station. It changed my life!

The last time I smoked a pork shoulder, I made the renowned mr. brown. It's great.

I worked in Charlotte for a big bank and one of our vendors invited our marketing department over every year a week or two prior to Christmas. Our rep would drive north for an hour or two to Lexington (N.C.) and bring back loads and loads of pulled pork barbecue, cole slaw, corn bread and sweet tea.

The best BBQ I ever had was last summer out our annual pork party. Homemade rub, homemade sauce, slow cooked over hickory... So very tasty.

Here in California it is hard to find good southern BBQ - but I try every one that I come across. Unfortunately I am still looking for the best.

I had amazing brisket in a gas station/convenience store in San Antonio Tx. Gave you a plate of brisket, creamed corn and 4 pieces of squishy white bread. Heaven!

A very good friend of mine makes the best ribs I have ever eaten!! He keeps his recipe top secret and since he moved I only get to eat them about once a year. Unfortunately that is not nearly enough.

I grew up about 20-30 minutes from Lexington, North Carolina, so there's no question what my favorite barbecue is. Man, I miss that stuff. I now live in Tennessee, and while there's some acceptable barbecue out here, nothing is like that. Good news is, my family still lives there, so every time I go to visit, I make sure to get my fill.

My husband makes a pretty fine bbq. We have a chest smoker he uses when the mood strikes him. I love smoked pulled pork sholder and beef brisket. We are always looked for more recipes/tips.

After a really bad day at my wall street firm, a few of us badly needed a walk to get off the desk. Daisy May's BBQ in midtown filled our need for meat, it was the best tasting meal we could have possibly eaten at the time.

Another excellent bbq book for beginners is Steve Raichlens "How to Grill". It provides a fine foundation on grilling, smoking and saucing.

But the best book on bbq sauces and rubs is Paul Kirks book "Championship Barbecue Sauces". It is without peer.

I have given both books as gifts for people new to the art of bbq.

Has to be the firemen's picnic. They have converted a 350 gallon oil tank into a pig roasting grill with a motorized spit. Pig goes on before dawn and first tasting is at dusk. Alway delicious.

I'm a rib guy. Spare ribs, too; none of those wussy baby backs for me.

May favorite BBQ isthe ribs from Dinosaur BBQ, Syracuse, NY. Huge ribs cooked for 14 hours. Definitely made four years of college a little easier.

Lately our best barbecue has been at home. My husband decided to try his hand at indirect heat and there's no turning back now!

Whole smoked "Beer-can" chicken. The thing took about 5 hours, but it was worth every minute. My neighbors either hated or loved me after that adventure with mesquite chips.

The most incredible food I've eaten off of a smoker was at an International Barbecue Championship in San Diego several years ago. Baked Alaska inside a hollow pineapple and cooked on a barbecue is just an example. I've had some mighty good commercial bbq in Texas and Tennessee. Day to day I make do with what I can fix at home.

I've been working on improving my smoking for pulled pork and chicken, so I've gotten some compliments that many of my guests' fav BBQ is in my apartment. But it's far from perfect yet.

The satisfaction and enjoyment of eating one's own slowly smoked tender beef brisket can't be beat! It's a labor of love.

Mmmm, I love the pulled (really chopped) pork at Bounty Hunter in Napa. Tried and tried to get BBQ when I drove across the South, but failed miserably, so I've never had the real thing.

My husband makes the best BBQ chicken and ribs. He also make a great burger, one of the best I've ever had.

I'm going to guess that here in Boston, we don't even have "real" BBQ! I make some darn good baby-back ribs, but I don't know that they're authentic.

Hoggy's BBQ in Columbus, OH or Montgomery Inn in Cincinnati, OH make some of the best ribs I've ever eaten.

I adore BBQ of all forms, but my favorite is the most accessible here in my hometown of Hagerstown MD: Hempen Hill BBQ. Great smokiness and really nicely balanced sauces!

my homie Norman back in undergrad had this awesome house with a pool and a pool house. but even better were his dad's ribs! so good you could eat them dry w/o any sauce!

the best bbq I've eaten are the salt and pepper beef ribs my boyfriend did in his smoker. Not too smoky, no sauces to overpower the beefiness of the ribs, and they just fell apart in your mouth. Yum.

At the risk of being boastful I've not had better 'cue than I can kick out of my backyard smoker; I've been honing my techniques for 10+ years now…away from that best I've had is the Bull's Eye steak cooked in the pit over red oak & served w/ shrimp cocktail, salad, pinquito beans, salsa & garlic bread at the Far Western in Guadalupe, CA (they edge out Jocko's in Nipomo because I went to FW first)- not textbook low and slow to be sure but it is a California tradition to refer to the style as "Santa Maria barbecue" and who am I to upset tradition?

in the u. city loop in st. louis, there's a little plaza with an outdoor market, right next to a gigantic parking lot. next to the market, there's a bbq stand-- you just buy it from a window. no chairs, tables, utensils... and it's incredible. i remember eating it in my mom's car on my way back to our house-- she had just picked me up from the airport. it totally changed my perspective on food, bbq, the market i grew up with, and my hometown.

Moonlight bbq in Owensboro, KY is the place to be. That mutton is worth a trip back any time.

My first BBQ experience was my best -- a place called Nap's. I'm sure it really wasn't that great, but it was the first time I'd had it. I've been coveting BBQ from Podnah's in Portland these days.

There are many good places to get BBQ, but my vote is for the pork shoulder in the backyard smoker with friends and family.

My late dad's slow-smoked, wet-mop brisket. He was a cook on the USS Hornet II during WWII and 'borrowed' the recipe from a shipmate. It wasn't officially Summer in Chicago until he broke out the grill and threw one on. Every Father's Day, I always roast one up in his memory.

The Texas style brisket from The Salt Lick I ate at the NYC BBQ Block Party about five years ago is still the best.

We went to a BBQ competition a couple of years ago. The competitors were handing us ribs right out of the smoker... That was the best!

Many years ago my wife convinced me to take her on a camping vacation to The Land Between the Lakes, so we could visit the American Quilter's Society Quilt Show and Contest in Paducah, KY. Our downstairs neighbor, on hearing we were going to Paducah gave us a fist full of money to bring him a BBQ pork shoulder from a long forgotten smoke shack in town. We couldn't resist sampling the package on the way back. It was my first 'real BBQ' experience and still my favorite!

Eastern NC whole hog wood smoked Q - especially the place in Goldsboro - sorry I'm having a senior moment and can't remember its name.

The best I have ever had is at J.R. Barton's in the neighborhood in Columbia, MO. It looks like its run out of someone's house and me and my friends have speculated that the area is a residential only zone but once the city officials tasted what was cooking they let it be. Everything I have eaten there has been unreal.

The best restaurant BBQ I can recall comes from my childhood in Richmond, VA. I loved Bill's BBQ. It's very traditional NC style served with no sauce and cole slaw. The best competition BBQ I've ever eaten came from Ed Mitchell out of Raleigh, NC. He used whole shoulders and whole pigs. With this method, you get a lot of the ham in your BBQ, which makes for a very distinctive taste. Finally, the best overall BBQ has to be mine. My friend picked some ribs up from a local joint near McDonough, Georgia, and we ate by her pool armed with cold beers and wet naps. The smoky sear on those ribs was so yummy, served with some good cornbread and collard greens -- it made for a perfect summer dinner.

The best Barbecue I've ever eaten was at the Barbecue House in Auburn, Alabama. Awesome pulled pork, mustard-based sauce. The sandwiches are topped with slaw that is tossed with the sauce. And, they make the "perfect" Brunswick Stew. Amazing!

Dee Jay's BBQ in Weirton WV has a terrific rib platter the sauce is perfect and they have a thrice baked stuffed potato to die for. Top it off with their ice cream white russian and you are in heaven

My backyard-my husband finally perfected his rib recipe this summer and, a few weeks ago, produced the best slab I've ever tasted. The pulled pork we had a a little shack in North Carolina comes in second.

Until I bought my husband a smoker last summer, the best BBQ I'd had was Speed Queen here in Milwaukee. Now, it's right in my own back yard.

The very first time I ate at Arthur Bryant's orginal restaurant in Kansas City. It was 3 parts flavor and one part atmosphere. Old, a little beat up, smokey and well seasoned, it's like the atmosphere gets into the food and makes it special. The best brisket and ribs ever.

I had a frozen brisket sent to me from Cooper's in Texas. It was the best I have ever had.

Some place a client took me outside of Charlotte, NC on a business trip in the mid 80's. Could never remember the name but it was the real deal.

I've had some great BBQ here in Tennessee where I live, but quite honestly my husband's baby backs are the BEST!

We don't get very good BBQ here in the Northwest. At least not the stuff you hear about from J&M Stern. But the best we have is made at home when we try our best to replicate what you might have in the south but I'm sure it doesn't compare.

Stopped at a shack halfway between Baltimore, MD and Charleston, SC I wish I remembered the name because it was the best Eastern Carolina barbecue I've ever tasted. The Brunswixk stew was great, too.

I need to take a proper BBQ vacation down south; but so far the best BBQ I've had was in NYC, strangely enough, at Blue Smoke. Might've been all the delicious sides that tipped the scales, or the house-brewed beer, but I still remember it as the best ever.

Martin's in Nolensville has really good beef brisket, and The Corner Pub in Nashville has killer smoked wings. However, my favorite BBQ is whatever is being slow-smoked on game day here in the South.

@TwoBarkingDogs- Silverton, CO was where I had my first ever chicken fried steak as a child! That place is so tiny I'm willing to bet we were dining at the same establishment.

The problem is that I can't remember ever having bad BBQ!

My Dad grew up on the South Side of Chicago, and there are several great BBQ spots there. When we used to go back and visit, I could not get enough ribs, hot links and white bread to soak up all that good sauce. Yum!

My current all-time favorite BBQ (it's constantly evolving!) is spicy orange-glazed pork loin with sides of French potato salad and mustard greens. YUM

the one that really sticks out in my mind is the first time i ate at RUB. it was a cold rainy day and i popped in to this place all my coworkers had been raving about. assorted BBQ with a side of chili cheese fries with real chili and melted cheese! warmed me right up. unfortunately since i no longer work near there i haven't been back. :-(

Baby back ribs from my Big Green egg - made my last batch rubbed with Dizzy Pig's Dizzy Dust, slow smoked for a little over 5 hours over hickory, and finished with a light coating of Blues Hog BBQ sauce. Served them to friends who are huge soul food/bbq aficionados and they said they were the best ribs they had ever had, period.

BBQ done on the grill at home! nothin' like salt and peppered chicken grilled so that the meat is juicy, but the skin crispy!

I like lots of different BBQ for different reasons. One of my favorites to eat out in a restaurant is Rendevous in Memphis, TN.

JayBee's in Gardena, Ca! Best pulled pork in the world. The fact that Jim Neeley's of Interstate BBQ fame sister runs it only adds to it.

A sadly now closed place on the outskirts of Florence, Alabama the name of which escapes me at the moment. Mine isn't bad, but there's something about eating it in the south. . . .

Living in update NY, we haven't had real good BBQ ever! I was turned on to BBQ by Chris Lilly when he was part of a BBQ show on Food Network. It all looked so good and he made it sound like going without good BBQ is a crime. I have a smoker and do ribs and chicken, but I can't presume to call that the best I've ever had ;-)

my standard go-to is uncle bub's in westmont, IL. but one time I went to some out-of-the-way BBQ place while visiting my grandparents in Virginia. forget what it was called, but their pulled pork sandwich was amazing!

like many other here I have to express my extreme devotion to Texas Brisket. The ones made at Kreuz's Market near Austin is by far the bet ive had and the large family style seating can only make it better!

The best barbecue that I've had is my first attempt at baby back ribs. I'm sure that it wouldn't be my family's favorite BBQ, but it was better than just edible and I learned what I would do different next time.

If you want a restaurant......I love Joe's Real BBQ in Gilbert, AZ.

Definitely the Salt Lick near Austin. Nothing makes me happier than walking in and seeing that huge bbq pit. It's the BEST.

The Best bbq I have her had, and it was by accident. I live in New Orleans and my grandmother lives in a city bout 10 minutes from new orleans called River Ridge. Well making my way to her house one day to help her with something at her house, I was on my way home and towards the end of the street, a building caught my eye. It was called Hillbilly BBQ. I was intrigued and went inside. It was known for its bbq from kansas city and it was just divine.

I went with a couple friends down to Madisonville, TX (about 30 minutes north of the state prison in Huntsville for a BBQ Cook-off. At the campsite it's like a big reunion, everyone is up at 3am to throw stuff on the smoker, and again at 5 and again at 7 so there's no sleeping and the smells coming from all over make you want to eat and eat and eat. The most interesting thing I had was smoked and bbq-ed catfish (completely changed the flavor of the fish). All the meat was from animals slaughtered in the past 48 hours, and I spent 2 straight days wandering from camp to camp stuffing myself with homemade sausages, ribs, brisket, chicken, boar, pig. . .easily the greatest weekend of my life.

I live in Michigan, where BBQ places aren't very prominent. But my mom is the mothafriggin master. She is my BBQ queen, always has been, always will be.

I'm from Kansas CIty, and I guess the answer is another question? What are you in the mood for? BBQ Beans? Hands down Jackstack. Ribs? Gates. Brisket? Arthur Bryants. Pulled Pork? Oklahoma Joes. There is so much to choose from here!

I grew up in Texas, and I've had bbq all kinds of places; but the very best I've ever eaten was at Luther's BBQ in Houston, Tx. You go through the line and have them pile on chicken, brisket, ham, pulled pork and whatever and take it to one of the family style tables. Everything is slow smoked and the sauce is a combination of salty, sweet, spicy heaven that I could drink all by itself-it's that good! They have a buffet with all the sides, bread, desserts, etc. that anyone could want with a self serve beverage station. I never waddled away from that place without feeling like I'd rolled in that sticky, wonderful sauce. God, I'm drooling! I want some now!!!

My aunt's grilled pork belly is ridiculous, and I have yet to finagle the recipe. All I know is it involves oil, garlic, cracked pepper, salt, a bit of lime and some secret ingredient that I have yet to figure out. All I know is that as soon as she pulls that slab of pork belly off the grill, it's gone in minutes.

Rudy's - I know it's a chain, but I don't care. I could drink their BBQ sauce straight from the bottle.

As a vegetarian, I haven't had much good BBQ. But I love the sides! Mac and Cheese, biscuits, baked beans -- yum!!! The best part of the meal, as far as I'm concerned, and Dinosaur BBQ does it well!

i would have to say that the first time i used my smoker was the happiest barbecue moment of my life. The results were amazing- changed my life forever

Jim's Rib Shack. Rock Island, IL. FoodTV did a thing on his place....he wouldn't give up the BBQ sauce recipe....would not do it. Best ribs and sauce hands down.

Gotta toot my own horn here. My 12 hour hickory smoked pulled pork w/ Montgomery Inn BBQ sauce is my fave.

The best b-b-que I had was a whole pig grilled over an open pit when I was stationed in England! Just a backyard thing, a going away party, but man was it great!!!

My boyfriend and I are Peace Corps volunteers in Guatemala. He has a 1x11/2 foot hand-made table-top grill he bought at a street market. We use kindling from a really sappy local pine to start the fire. We make our own bbq sauce (where do you buy bbq sauce in rural Guatemala?) and slather it on chicken pieces that comprised a living chicken just hours before. We wait on his porch while it pours rain for it to slow cook over the tiny pile of coals. Every time, it is the best bbq we've every tasted.

Whole Hog!!! Every summer in rural Northern Michigan I throw a Whole Hog event. It's the real deal cooked low and slow. The thought keeps the long, cold winters here in Michigan at bay.

Oh so many but most memorable Eastern NC Wilbur's so moist and juicy with vinegar pepper based sauce. When we drive to NC I start salivating around Roanoake Rapids.

The best pork ribs that I've had were made by my husband who took 3 days to prepare them after comparing and looking up recipes for 2 weeks before hand.

Most memorable is from a dive next to a pool hall near East Tennessee State University in Johnson City, TN. I've been a fan of the eastern Carolina style every since!

I think the best BBQ always comes from our own backyard :) Its made with extra love.

Although there are some great BBQ places mentioned above, I still remember a great BBQ place in Anchorage Alaska where I was stationed in 1970.

Along with the BBQ, they had an excellent green chile salsa that they must have made on premises.

Then again, after eating in the chow hall, a BBQ'd anything would have been great by comparison.

The Salt Lick in Driftwood, Texas. Between the brisket and the mashed/hashbrowned combination potatoes, I always eat too much. The white christmas lights on the outdoor patio always have a wonderland feel on a starry night.

I use Chris Lilly's BBQ pork shoulder recipe for my smoker and it's awesome! Found it on a website for the Weber bullet smoker and only one I need. It fantastic every time.

Best BBQ I ever had was at my friend's 4th of July picnic in Memphis... her uncle made the most, melt-in-your-mouth BBQd pork shoulder I think I've ever eaten. :)

The best BBQ I ever had was at a local dive in Memphis. I don't know if it had a name...they had a crude wooden sign outside that said BBQ. I wouldn't have stopped there - it looked that bad outside - but the manager of the hotel I was staying at told me to go there when I asked him where I could get great BBQ. He was right!

I haven't had much authentic BBQ. There was this little place in Jackson Hole though. I just bought a backyard smoker though, so delicious BBQ, here I come!

My family loves my slow cooker BBQ. Also a favorite is Lexington BBQ in Lexington,NC My nephew smokes a mean BBQ as well.

The best barbeque I've ever had was from one of those hole in the wall places kinda' like Bob started with. This man would haul his grills out and cook ribs all day and people came from miles around. There were no tables to sit down, so he wrapped your food up in newspaper for you to take home. This was in Hillsdale, MO, and I can't for the life of me remember the name.

My favourite is Turkey...Friends may disagree. .. but I love the unique taste a BBQ can make

My Nephew makes the very best ribs ever BBQ'd. It takes him 24 hours before he grills to get them ready. He starts with a home made rub, then a home made marinade, bakes them, then grills them with more of his home made sauce.

The best BBQ was when I was a young teen. My mom and dad took us kids to visit some friends in Commack, LI. There were hundreds of people. The BBQ was poolside. The foods were so varied: ribs, chicken, pig, burgers, franks, corn, veggies, salmon, liquor for the adults, lemonade for the kids,. Music, dancing, game plaing talking. 12 hours long!!!

I've had some good bbq but the best I've had so far has been my uncles in his or other backyards in Pensacola, FL.

I was at a company plant in Thomasville, GA years ago, and we had a working lunch planned because we had so much to do. The folks at the plant brought in barbeque so good that we didn't get any work done over lunch, we just talked food.

I went to a restaurant called Famous Daves here in Minnesota. They have good bbq and you can buy their sauces in the supermarket, which I do all the time.

There was a little hole in the wall bbq in Fort Myers, Florida which we visited every spring when I was young. Nobody has ever even come close to their bbq magic.
