Serious Heat: The Quickie Banh Mi

There is an Asian lady who makes a sandwich very similar to this on Penn Ave. in the Strip District in Pittsburgh. They don't have mayo and the sauce is some soy -ginger mixture and the veggies are marinated in a sort of rice wine vin. She sells them from a cart for $5. SOooo good.

By the time breakfast comes around, you haven't eaten for 12 hours. That is a long time. To maintain a healthy metabolism and avoid drastic changes in blood sugar, one should eat something every 3 - 4 hours. So, it is particularly important to break your 12 hour fast. Every cell in your body needs energy. Your cells make energy (in the form of a molecule called ATP) from glucose (found in all food). ATP is important for your brain to function properly as well. You'll be more alert and think better. Additionally, if you are starving by lunch because you skipped breakfast, you'll tend to overeat or make poor food choices. Sort of like when you've been drinking. You're just so hungry you don't care what you put in your mouth or how much.

As far as what to eat. High sugar should never be an option under any circumstances. It is bad in more ways that I am willing to type here. You should have a balance between carbs, fat, and protein. Perhaps an egg sandwich with tomato, oatmeal with walnuts, yogurt with fruit and granola, multigrain waffles with fruit and milk. Even cereal will do or a smoothie if you have to run out the door.

I am not a doctor, but I am a biologist. We tend to know more than doctors because they don't necessarily know the biology behind bodily functions. Don't believe me? Ask your doctor about how your cells make ATP. Note: Your endocrenologist may know this.

For KitchenAid fans: An NPR segment

Heard it on Monday. You should try to get one asap. I bought my first in my 20's when I was totally broke and just getting by. I saw an ad in the Target circular for a $169 sale on the Classic model. I got right in the car. It was so worth it. I ate pretty lean for a couple of weeks, but I was very happy. I have upgraded since. They are so worth sacrificing for.

I buy food before anything else. IF I have money after buying food, I may buy something else, or just maybe more food. I've read all of Michael Pollan's books and I am a convert to the real food movement. I'm not rich, but I buy what I can. You should read this recent Time article.

What is appealing about beer?

By the way. Whether or not you can tolerate bitter flavors has everything to do with your genetics. I teach Biology and I use the pale ale example in my class (they are college students, so it's appropriate). I am what is genetically called a "non-taster". Therefore, bitter flavors are more tolerable to me, hence, I love a good, bitter beer. You may be a "taster" What is it that you are tasting or not tasting? What is appealing about beer?

Domestic, macro-brewed beers (i.e. Bud, Coors, Miller, even Yeungling) are all garbage. There is nothing appealing about them. Imported macro-brewed beers are garbage as well (i.e Heiniken, etc.)

That said, I LOVE beer. Stouts, porters, pale ales, barley wines, bocks, etc. Way good. Try a good microbrew. Stay away from anything that says pale ale in the name, they are bitter (which I happen to like).

Some of my favorites are from the following breweries: Great Lakes (Cleveland), Rouge (Oregon), Anderson Valley (CA), Troegs (PA).

Cook the Book: 'L.A.'s Original Farmers Market Cookbook'

Farmers@ the Firehouse in Pittsburgh. All of the participating farmers sell organic produce. One can also purchase organically raised, grass-fed meat and eggs as well as local, organic flours and baking mixes. Slow Food Pittsburgh hosts the market and has a booth where they cook featured recipes, hand out samples, and share recipes.

dolmas (stuffed grape leaves) recipe?

The Restaurant Depot sells them in a can. You get several dozen for around $6.00. They are just as good as anything I've had in a restaurant for a lot more money; I am sure the restaurants just buy them as well. Squeeze a little lemon juice on them and serve with a side of homemade hummus and people are impressed.

Toasted coconut cake. Pushing coconut into the icing is not enough for me, however. To be truly coconut cake, I think you need to mix coconut into the batter. The coconut mixed into the batter need not be toasted, but toasting the coconut before smashing as much as possible into the icing is a must!

Weekend Cook and Tell: Make a Meal for $10

Chicken pot pie. I always have the ingredients for this already on hand. No shopping required.

Sautee chopped onion and garlic in a small amount of oil.
add diced potatoes and chicken stock
throw in some thyme, sage, rosemary, whatever herbs you like, dried or fresh
cook until potatoes are almost tender
thicken about 1/2 cup chicken stock with corn starch and add to hot pot
add shredded, cooked chicken
add frozen corn, peas, and/or lima beans
For crust, make drop biscuit dough with milk, flour, baking powder, salt, and melted butter.

Put chicken mixture in casserole dish
Dollop biscuit dough all over top of casserole and bake at 350 until biscuit is browned.

Strange home-made pizza

Make it on the grill. So good. The heat can't be too high or the bread will burn. You'll also have to babysit it. Have your toppings ready. Cook one side until browned, flip, quickly top, close lid. Parts of the crust may burn, but I think those parts taste good as well. This may take some practice, so don't get discouraged. The hardest part is getting the dough onto the grill in the disc shape you'd expect a pizza to have. A little mis-shapened crust tastes just as good, however.

Spice bugs!

Throw all grain products and pasta away. You may not see them now, but they are in there. When I get infested with pantry moths (and their larva), I throw everything away and scrub all of my shelves. When I purchase new pantry items, I keep them in double zip top bags. Even if the boxes are not open, these critters can find their way into pasta and flour. I read once that many grain products have these insects in them when you buy them, so they are hard to avoid all together and forever. Don't give them access to your food and you'll starve them out. I've found the same moth larva munching on sweaters, so you'll need to take all of those to the dry cleaner and seal them in giant zip top bags for the summer. Make sure there are no holes or openings.

Confused by this article, oncomouse? Do you mean before or after you read it? She explains that the read needs to assume that staples are on hand. It seems clear to me. Avoiding canned food is not elitist. Canned food is usually high in sodium, which should be reason enough not to use it more often than infrequently. Not only does my high blood pressure drive me away from cans, but the taste of canned veggies is a huge turn off. I keep frozen as a substitute when fresh is not available. Finally, I enjoy making soup. If you eat homemade soup enough times, canned soup starts to taste awful. There are some good things in cans: crab, tuna, low sodium chix stock, beans, tomatoes (crushed, sauce, etc.), and fruit that is not in heavy syrup (too much sugar).

People observing Lent--how is it going?

I never understood why fish is OK on Fridays. Meat is the muscle tissue of animals. When you eat fish you are eating their muscle tissue and they are definitely animals. If you ask a vegetarian, fish counts as meat.

Two Sides of the Same Coin

Why are those who promote self-sustainability and fresh local food considered elite?????? Isn't that what everyone did before the advent of industrial farming and grocery stores? What is wrong with having a garden and chickens? If you lose your job, you still have food. How anyone could have anything negative to say about choosing the farmer's market over the grocery store is beyond my comprehension. The Obama's are setting a wonderful example.
