Grew up in an Italian home...so cooking, creating, and eating are an important part of everyday life.

I agree with your suggestions of adding chopped shallots and sliced (or chopped) garlic. I would add crushed red pepper and freshly chopped flat leaf Italian parsley as well. That is the way my Grandpa Pasquale made it:) Still think of him every time I make this!
