What do you make with your cast iron?
I originally bought my cast iron skillet to make cornbread. I put the skillet in the oven and then preheat to the desired temperature.
I have also begun using my iron skillet to finish a frittata in the oven. It's great!
Weekend Cook and Tell: Anchovies
This probably sounds a bit crazy but I make nachos with anchovies (in olive oil). Actually, I made this for dinner tonight. Otherwise, the nachos are pretty normal.
What to do with paneer
Saag paneer (spinach and paneer). Quite straightforward to make and you can use frozen spinach. I made this very dish in the last week. Leftovers taste better than the first day too!

I bought about a pound and a half of fresh Hatch chillies from my local grocery store. I live in North Carolina and they were sold in the same grocery store about this time last year.
I've just finished roasting and peeling my fresh chillies. Found this thread when looking for ideas about how to use them.
