Appetizers?
Asian summer rolls. You can do different types ie shrimp, chicken, pork, tofu (satisfy vergetarians). Wrap protein, vermicelli noodles, cilantro carrots and lettuce in rice paper. You can make a peanut satay or sesame soy or chili dipping sauce to accompany. You can make ahead and keep refrigerated until you leave. They should be fine in transit.
Cheap and low maintenance for a crowd
Veggie lasagna is great made ahead, you can customize it by adding your favorite grilled or roasted veggies like zuccini, portabellas, eggplant, or asparagus. All you need is a salad (caprese is nice), bread and wine. On his birthday just pop the lasagna in the oven and enjoy the party.
What to do with Tarragon...
puree alrge bunch with lemon juice, garlic, olive oil and fresh pepper. You want a consistency similar to pesto. Stuff under the skin of a roasting chicken. Roast chicken as usual.

RECIPES FOR CANNED CORNED BEEF....
I would make homemade hash. Saute onions, peppers, shredded potatoes and corned beef. Top with fried eggs add salsa/hot sauce if desired.

Anniversary Dinner
I love peenne alla vodka. I would add a decadent protein like shrimp or scallops to make it special. Make a fresh tomato and mozzarella salad and a loaf of bread to soak up the sauce. You may want to visit a good bakery and purchase a special dessert to prevent being stuck in the kitchen all night
Sides with fish
I like to sautee white beans and spinach in garilic and olive oil, grilled white and green asparagus, brown rice and fresh baked bread. Maybe try different rices like wild, black, sushi, basmati. The whole grains tend to have greater satiety I think that's why all the recs.
Vacation Cooking
I would try salad using fresh florida produce, good loaf of garlic/Italian bread and insert protein
pan fried steaks, grouper, salmon, chicken piccata.
Pasta bakes are great too, if you don' t have pans, oick up the aluminum ones hefy an glad make, this will allow you to make suffed shells, lasagna, baked ziti, mac and cheese, tuna noodle casserole and roast meats and veggies.
Also a breakfast for dinner may be fun eggs/omlettes, pancakes french toast. Have fun
Canned Collards?
Try adding them to a soup. perhaps minestrone, pasta e fagioli, or mix veg.

Birthday Dinner for Hubby
My mom makes a decadent cake for me every year, devil's food w/ sour cream choc chips and choc pudding mixed into the batter and white butter cream frosting. My choices for the main course vary this year it was mexican- my favorite black bean soup and a chicken burrito w/ loads of guacomole last year seafood restaurant- spicy tuna and avocade roll and miso glazed salmon w/ white asparagus and sticky rice.

Grilled chix avocado, honey mustard on whole wheat wrap
Grilled muenster and tomatoon whole wheat

Lately cravings abound- spanish rice, steamed dumplings, and guacomole!
Serious Efforts: Oily Mac n' Cheese
I recently read that the oil on pizza is from poor quality cheese that contains oil as pooch said. I would thin that using a high quality milk only cheese would help. I would also consider using less butter, just a little less so that you don't have to add any other ingredients and alter the recipe.
Your Favorite Thing to Do with Leftover Rotisserie Chicken?
I 2nd soup and there is no need to go shopping as long as you have broth be creative, add tortellini, barley, rice, or egg noodles
and change up the veggies-
southwest- corn black beans, peppers garnish w/ salsa and avocado
italian- tortelini, tomato, zuccini, cannelini beans
chinese- add beaten egg and chix for egg drop
barley and mushroom
Recipe Request: Shrimp-Based Soup
You could also add shrimp to a pasta e fagioli, eascarole and white bean or jumbalaya.

What Are Some Food Classics?
My dad had a limited repitoire when I was growing up but what he did make was damn good:
-bacon and egg scramble with Nesquik to drink
-egg salad, still warm from the just boiled eggs
-French toast
-buttered waffle w/ syrup (he would put the butter on right away so it got nice and melty
-enormous pancakes
My mom used to make
-"cigars" ( a slice of ham rolled around mayo and a bread and butter pickle)
-manicotti
-stuffed peppers- ground beef, minute rice, broken up white bread, cooked in tomato soup based sauce
-chicken nuggets with honey and sweet and sour sauce for dipping
-cake-devils food cake with sour cream, choc chips, and instant pudding mixed into the batter, and white buttercream frosting. (I still request this for my birthday)
-Antipasto with salami, provolone,artichoke hearts, pepperoni, caponata, olives, roasted peppers
-macaroni salad with shrimp mayo and hard boiled eggs
Chinese takeout - wonton soup, egg roll, moo shu pork, egg foo young, chicken with broccili, dim sum.
Milk: Way or No Way?
I am a big milk drinker, I grew up having to drink a glass with dinner everynight. These days 1% is my go to, but I also enjoy vanilla soy. I have it in cereal daily, but I also love a tall glass of chocolate milk and hot cocoa is so much better with milk. My favorite protein shake is skim milk, ice, peanut butter, banana, and chocolate or vanilla whey protein. Got milk?
The Hotdog(Sausage): Why so Good?
This is bad I know but I absolutely love pigs in a blanket, the mini hot dog appetizers in puff pastry. I ate way too many over the holidays, they are so good, I think I am addicted.
I also love good salami, my mom makes antipasto and lines the platter with salami and provolone and arranges caponata, black and green olives, roasted peppers, pepperoni and marinated artichokes on top I love the combination.
Grilled kiebasa and hot dogs from a truck either sabrett, nathan's or hebrew national are amazing!
Dinner and a Show, Movie and Popcorn: What Else?
For our family road trip = IHOP breakfast, Wendy's lunch and Denny's dinner. (Healthy huh? at least the road is the only time we eat at these places).
Ikea and swedish meatballs and cinnamon buns.
Mall= starbucks- winter hot cocoa, summer frappucino.
Amusement park= frozen lemonade and hot pretzel.
Yacht club= frozen banana margaritas by the pool.

Hiking and granola bars and PB+J
Baked oatmeal brunch
Digging clams and homemade chowder

What goes with Fennel Salad for lunch party?
I would make a few frittatas or quiches to serve with the salad, you can make different fillings in each, ie
crab, goat and asparagus.

Any food you thought you hated until you finally tried it?
I absolutely hated fish as a kid but now it is my absolute favorite. I also thought I hated spinach but I had only tasted plain frozen. Then I tried it sauteed with olive oil and garlic and I fell in love.
Work Potluck Suggestions?
How about wraps. buy spinach and tomato wraps for color and fill as desired ie:
spinach, cream cheese turkey and tomato
fresh moss tomato and basil
roast beef cheddar grilled asparagus and horseradish sauce
Slice each wrap in 4- 6 slices and secure with a toothpick. Fan on a platter.
