jazzing up white rice
Just adding a TBS of sofrito for every cup of rice and olive oil gives white rice an added umpf!
I also mix in parsley and grated parmesan cheese for a provencal-style white rice. I also like it pilaf style, like in the middle-eatern restautants where they mix in sauteed vermicelli noodles and almonds.
50+ baked potatoes
Make a massive Pastelon...
Baby Spinach and Potato Pastelon
Potato and Fried Eggplant Pastelon
Hummus Pastelon
Mix it with Boursin Cheese and make an awesome mashed potato casserole...
Trying my own CheeseBread Sticks
i do not make my own bradsticks... but I do embellish store-bought dough to make them my own. Here are a few of my favorites:
Sun-dried Tomato and Roasted Garlic Breadsticks
Garlic/Parsley Bredsticks
Roasted Garlic, Pepper and Parmesan Breadsticks
A plethora of red peppers - help!
these are my ideas for red peppers...
Sweet and Sour Red Pepper Dip
Muhamara Dip
Romesco Pasta
Stuffed Peppers
Red Pepper Salad Dressing
Chefs vs. City: Anybody watching?
i watch... I mostly like the factoids about the foods typical of that city. Gives me some additional insight on the culinary perspective there...
Cooking with Rosé
use it to cook a tuna antipasto or a stewed salmon...
What bread or cracker do YOU eat with goat cheese?
Any whole wheat bread will do it for me... baguette is specially nice. Whole wheat pita is good too... top with grilled vegetables and you have the best sandwich.
Need Vegetarian School Lunch Recipes!
Here are a few vegetarian alternatives tried and tested on my 7-yr old nieces, and they're not vegetarian, but picky eaters too:
Babagahummus
Veggie cream cheese Sandwiches
Asparagus Sandwiches
Empanada Gallega
Spinach Pinwheels
They're mac & cheese lovers, so they always ask me for Undercover Mac & Cheese and Cauliflower & Cheese Mac
Hummus Sandwich
The wildest food you've ever tried and will never try again
crickets (chapulines) in Oaxaca
escargots in Chicago
Do Gals Eat Less When Guys Are Around?
not usually... I tend to eat according to my hunger... and what I may have in front of. Some foods are just addictive.
I do have certain no-no's on dates... no long noodles - so spaghetti, lo-mein, and the such are not eaten on dates. No Subway sandwiches... they're messy. Try to avoid garlic... although recently I had a date where the guy also believed in the "2 garlics cancel each other" theory. Also, nothing that I could potentially stain myself while eating. And recently, I've added sushi... unless I go to a place I know that would make the rolls small enough for my petite-sized mouth.
Herb Overload
is garlic an herb?? never considered it as an herb...
I do indeed use garlic for almost everything I cook... So I guess that would be my favorite one. But I also use fresh basil, parsley and bay leaves a lot. I buy garlic and herbs mixes, paprika (pimenton) and Italian Seasonings dried to complement the fresh.
Favorite Food fiction
I also agree on Like Water for Chocolate... , but if you can read in Spanish, I encourage you to read it in its original language (Como Agua para Chocolate). Forget about the movie... the book is outstanding.
I also highly recomemend Eat, Pray, Love... it's a true story of a writer that takes a year of her life to find herself by eating in Italy, meditating in India and finding true love in Indonesia. A truly inspirational book...
Mark Bittman - Food Matters
nope... I am a "fly by the seat of my pants" kind of gal. I answer to what my stomach craves each day. Maybe that's why there's so many cheeses in my fridge!!!
too many bananas!
freeze them and use them in smoothies... my favorite is a home-version of Orange Julius' Tropical Cream Supreme. Ahhhhhh!!!!
Best Party Dessert on a Budget?
if you're intp mexican fare... you can try CRISPAS with CAJETA.
Crispas are fried whole wheat tortillas and then sprinkled with cinammon sugar.
For the Cajeta - just take a can of sweetened condensed milk and submerge it in water and boil it for 2 hours. Trun upside-down at teh 1-hour mark. Let it cool off before opening the can.
Dunk crispas in the Cajeta... DELICIOSO!!! and cheap too. It's the sweet version of nachos with cheese...
steel cut oatmeal
Cook it in MILK... and season the milk with brown sugar, vanilla extract and a dash of salt. Then cool it off by pouring some more milk on the edge of the plate...
I worked for Quaker Oats for many years and oatmeal is very polarizing - people either love it or hate it. If you want to taste GREAT oatmeal, go to Le Pain Quotidien... they make outstanding oatmeal there. Order it with milk and seasoned. Truly great.
If you're still not up to it in the cooked creamy form... I use oatmeal to "bread" eggplants for eggplant parmesan and making eggplant sandwiches.
One word answer only, please...Coke or Pepsi?
NONE - I rather have a Cola-flavored Ginseng Up...
Ideas for stale/leftover cereal ?
make a version of rice krispies treats... I use almond butter instead of marshmallows. I guess you could use the "nut butter" of your preference depending on the flavor of the cereal...
One word answer...Miracle Whip or Mayonnaise?
Vegenaise - the grapeseed oil version.... ALL THE WAY!!! Even my dad who is a vegetarian-phobic did not notice the difference. Tastes just like Hellman's regular.
Tuna Fish Salad WITHOUT the Tuna
of course... now that i am vegetarian I make my TuNo Salad sandwiches with soy protein. If you buy the kind that comes without sauce, they taste just as good as I remember the originals. Just make sure to squeeze dry the TuNo.
And if you're in the mood for something room temp or hot, you can stew the tuno the same I used to make stewed salmon... I make it into antipasto and eat with white rice, crackers or tostones.
