Weekend Cook and Tell: Pancakes

I was already planning to make pancakes this weekend. My new favorites are yeast pancakes from this site: Vegan Yum Yum.

We aren't vegan, but it's easy to substitute the real thing for the vegan versions, and I honestly think a little vanilla soymilk adds a nice vanilla flavor to them. They're thicker and heartier than the baking powder kind, but I really like them. I haven't make my old ones since I found this recipe.

I had two kids cookbooks my mom bought from magazines she subscribed to, but the one I remember using the most was an old church cookbook because it had a recipe for banana bread. To this day, I still have that cookbook, but I memorized the recipe about 20 years ago.

Breakfast, the most important meal of the day? Really?

I love breakfast and it's probably my biggest meal of the day. I don't eat meat, so I make sure to get lots of protein at breakfast and it energizes me for the whole day. By the time dinner rolls around, I'm tired from a long day and just not that hungry. I usually cook dinner for my husband and me and end up saving most of mine for lunch. I would personally rather eat a light meal at night so I'm not uncomfortable all night long and wake up hungry. But, I guess it's to each his own.

Lunch with a coworker who you don't like

I agree with going outside, not just to avoid a co-worker, but to relax and enjoy the outdoors. I do it everyday while my coworkers have their cliques in the lunchroom. I work in a lab as well, so lunch is the only time I can see the sun, and I love it.

Chefography This Week on Food Network

I caught the last 30 seconds of the one on Paula Deen and it was funny. A lady asked her son what her favorite dessert was and he said, "Butter.... fried butter with sour cream." It was funny and good to see that even he has a sense of humor about her ridiculous meals.

Every meal I eat is meatless, so this is tough. I love vegetable lasagna with homemade sauce, falafel with tahini sauce, fresh pita bread, and tabouli, and honestly, a good veggie sub. I could eat a sub for lunch every day.

I've got another vote for bread of any type. Sometimes, kneading dough can be so therapeutic. I've definitely made pita bread before, because it's so quick and easy, just to vent my frustration on the dough.

How do YOU make a tomato sandwich?

I usually saute thick slightly salted tomato slices in various herbs and add a splash of balsamic vinegar as I take them off the heat. Then I put them on thick fresh bread with a thin smear of cream cheese and some basil and toast the whole sandwich. My husband and I eat these a few times a month in the summer.

Do you Ever Make Food you Wouldn't Eat in a Restaurant?

I am not a bad cook, but I am cheap, so if I'm paying a lot of money for food at a restaurant, I want it to be something I don't know how to cook or can't cook myself. It seems silly to go out for something I can make at home for 1/4 of the price.

Are All Parties Potlucks Now?

I don't ever host potlucks, but the majority of our friends do- and that's great for me. My husband and I are the only vegetarians out of our friends, so if we don't bring something, it's hard to tell what we'll be able to eat.
