What's Up With Eggo?
Listen, if you have some waffles in your freezer, they can come in handy with your Thanksgiving stuffing. Use some in tandem with your dried breads, it ads a nice sweet flavor. I had some belgian waffles leftover last year too and they really work nicely in the simple dried bread/celery/onion/apple stuffing.
What should I put in my crockpot?
You could try an easy and flavorful chicken and dumplings. For best flavor? Use a rotisserie chicken from your local grocer. Pull of big chunks of meat. Dice the skin (yum) real tiny. Throw in onion, celery, garlic and a can or two of chicken broth.
And for dumplings: 2 C flour, tablespoon of baking powder, tbsp salt, 1 egg, tbsp oil, tbsp dried parsley and dash of milk - stir well and knead out very thin. Slice into strips of dumplings and boil for 5-8 minutes in salty water. Add to your stews or potroasts!
Stuffing/Dressing Panic!
I have been guilty of cooking a stuffed turkey breast a week or so prior to the holiday, JUST to test my stuffing-making (and gravy-boating) skills. So if it isn't too late, you could try a smaller version of what you plan to do large scale later this week.
Personally, I believe the simpler the stuffing, the better.

Sourdough, sourdough, sourdough. We always have so much fun growing our own yeast starter and then the raisin bread, the sourdough bowls, anything we can keep it going with.
