It's not technically a *cooking* class, but I took a great class on butchering a pig at the Brooklyn Kitchen which Alaina wrote up on SE:NY. That was a blast, and I'd recommend it to anyone.

Additional health warnings that we should adddress.

Having an ax to grind doesn't seem that persuasive, even to those who are sympathetic to the points you're making. Dragging in politics that are going to be even more polarizing makes it seem more like you're trying to harangue people, not warn them about what you see as a health issue.

Your post seems wildly out of sync with the tone and content of the rest of the contributions on the site -- maybe there's a more constructive/productive way to discuss these topics that you're obviously so passionate about?

This is supposed to be "Serious Eats?!"

The thing I love about this site is that it's not Pretentious Eats, it's Serious Eats. I love food, and eating, but I'm not educated on the topic and love feeling like I'm not being dismissed just because I come at this from the perspective of an enthusiast, instead of being an expert. I find all of the healthiest, most vibrant communities on the web are those that respectfully welcome new members, and I've appreciated that even my presence here as a lurker is accepted.

The only thing I'd change is that there be more content on the site. :)

Where to eat in Austin around 6th Street?

There's only one place on 6th I really like (the rest are scattered around town) and that's the Boiling Pot.

It's on 6th at Sabine, and it's the best possible way to eat seafood at SXSW. :)

What are the best ratio's for fresh ground burgers?

I've only just started experimenting with different ratios, based on the (possibly apocryphal) mix of chateaubriand and brisket at Shake Shack, and a 40% brisket mix was actually not too far from right.
