Weekend Cook and Tell: Pancakes

Saturday is the end of my hell week at work (a conference we've been planning for MONTHS ugh), so Sunday I'm going to make myself some cottage cheese pancakes, because I haven't made them in forever and they are SO good.

Falafel - trying to make them at home...

Uh, go get dried chickpeas from the bulk aisle if you can. I sent my favorite falafel recipe to one of my favorite food bloggers, so I'm sharing her blog on that in the link. After I sent that to her, I started deep frying them instead, and I have to say it makes a difference if you don't mind eating fried food every once and a while.

Dried beans that are soaked are 'crunchier' than canned ones, which are cooked, so you get a different texture once you FP them up. I prefer tzatziki to straight up tahini for saucing, but do what you like!

@PumpkinBear - I spied them in bittman's HtCEVegetarian last week and decided I must make them. Haven't looked at the recipe closely since then, but it's shredded sweet potato, can of cannellin beans, 2 cups cooked chard (from my garden!), and other ingredients I can't remember off the top of my head. Hopefully it will be good, I haven't really dabbled in veggie/bean burgers yet so this is my virgin run :P

Freezable meals for one-two

Eggplant parm freezes very well, and it's a little lighter if you bake the eggplant instead of frying (or chicken). I've also had good luck freezing chili verde - great in burritos, turned into a stew with more veggies, or with rice and beans. Also, you can cook a whole chicken or roast and reuse the leftovers in other quicker meals throughout the week. A Sunday dinner starring a whole roast chicken can turn into a quick soup, taco (or even enchilada!) fillings, a curry, or even just in some marinara sauce wtih pasta for a few days.

What's for Dinner Tonight? The 'Come-Back-GatorPam!' Edition.

It's 9:30 and I'm still at work so I'm sad to report I hit up fast food. But let me tell you about last night's dinner, because it was awesome! I mandolined up a big zucchini from my garden and some new potatoes for some squash gratin. I also had two chicken thighs that didn't fit in the pan for the weekend's arroz con pollo, so I cooked them up with a honey-lemon sauce and browned them under the broiler. It was great!!!

Microplane Zester-why do you hurt me when I love you so much?

garlic, ginger, citrus, cheese, that's about it for what I can think of off-hand. But I'm with you on loving it to death. My bf broke the first one we got (no idea how), and I didn't realize how much I loved it until it was gone. I replaced it within days.

Making dog food

My bf's 9 year old golden retriever/yellow lab mix needed to lose weight too after he turned into a fatty dog. The vet recommended 1 can of drained, unsalted greenbeans every night with his 1 c of low calorie food (total feeding=once daily). It keeps him nice and svelt and he loooooves his green beans. I would imagine you'd need to use less veggies on a smaller breed, but ask your vet!

Dinner Tonight: Baked Ziti

I made this tonight too, with a few hot sausages and a can of artichoke hearts added in. I pulled a superflake move at the grocery store and forgot to buy mozzarella, so I folded in 3-4 oz of goat cheese intead. Superb.

Breakfast to go for 4- Have suggestions?

Grab your favorite strata recipe, cut your bread cubes up extra small, and cook them up in a muffin pan. Or just take whatever type of quiche, omelet, or other egg scramble ingredients they'd normally like, scramble with some eggs, and do egg muffins plus some fresh fruit.

What Should I Make to Accompany Mac and Cheese

Since mac & cheese is kind of heavy, you might want to go with fresh greens - like a spinach salad with warm bacon dressing. If you want to add man-stomach-friendly protein, you could go with chicken wings (grilled or oven roasted). And serve it family style - if he thinks of mac & cheese as a main dish, he can bulid his plate that way.

Weekend Cook and Tell: The Temporary Vegetarian

I found myself cooking for one last night, and discouraged from actually getting groceries by the fact that I needed to get WAY more than I could bring home on my bike, I decided to scrounge around in my pantry and use up the last remaining fresh source of protein in the house: a lonely, lonely egg.

I did a littl bit of a hackjob on chilaquiles, hitting one fresh ripe tomato with the immersion blender, cooking it with some hotsauce, a teaspoon of tomato paste, and some garlic powder, then stirring in some fried up pieces of corn tortillas. I went with eggs blindfolded for the easy factor, hit the plate with a dollop of sour cream, and dinner was served. mmm.

I usually do turkey meatballs with about a pound of ground turkey, one egg, 1/2-1 c breadcrumbs (I go by texture mostly), half an onion or some shallot very finely minced, and lots and lots of dried herbs for flavor, plus a hit or two of olive oil if I need a little moisture. Usually served with vodka sauce and zucchini over spaghetti ... a staple in our recipe rotation.

I grew up on venison, though I haven't had it since I lived with my parents so I don't have any game-specific recipes.

I eat lunch in my office with my door closed. It's wonderful. And I only ever actually 'go out' to lunch with coworkers I don't like. Then again, no one I don't like bugs me to spend time with them. Whether that is good luck or an indicator of how bitchy I seem to the rest of the office - it works for me ;P

@GinaPet - Pitt alum here! What are you studying? I moved across the country mere weeks after graduating to a town with a very limited food scene, so eat lots of 'burgh food for me as I miss it so so much. You've got it good in the 'burgh, especially if you're living in city neighborhoods.

Need Vegetarian School Lunch Recipes!

Burritos and enchiladas are my favorite freezer food. Beans and/or veggies and rice, eggs+beans+salsa+cheese for burritos. Black bean enchiladas are nice and filling (and healthy), I like to do a chile verde tomatillo sauce on them. How does your kidlet feet about quinoa? High protein grains make a great base for a lunch. Something like this might be a little too pasta-salad-y, but I think it would fit your bill of healthy veg lunch fare. Also, don't discount a piecemeal meal: whole grain crackers, a nice cheese, nuts and dried fruit, plus some yogurt or something like that for when you don't really want to have to prepare a lot of food.

Befriending Chefs/Restaurant Staff

First comment should do the trick. I've actually had good luck with one incident where my bf's cousin insisted that we needed to tip the chef a shot of tequila. I thought he was nuts, but the guy loved it, took us out to drink with him and some of the other cooks afterwards (it was the end of the night when we did this), and totally befriended my bf to the point of going out for drinks after close more often than not and having a server bring out *his* bottle of tequila from the back office to share with us the one evening (my bf traveled to the city he was in much more often than I had the pleasure to).

I have no idea if that is a raging fluke or if sending a drink back to the chef makes you a shoe in for at least a quick chat over a drink, but it seemed to work for us :P
