Couscous and chicken. My fiance and I broke it off about 10 days ago, and I'm getting used to cooking for just me again. So far, it's mostly couscous and chicken or sandwiches. I need to branch out (although couscous and chicken is about my favorite meal ever)...

Cook the Book: 'Gourmet Today'
My very first cookbook is the 1995(?) edition of Joy of Cooking. One of my first college boyfriends brought it over. He made me dinner for Valentine's Day - Stuffed Jumbo Shrimp, wilted Spinach Salad, and Sauteed Asparagus. He never took it back - and now it's mine (although he does know I have it and bought another copy since, lol).

In Moab, I highly recommend Miguel's Baja Grill, which is on Main Street. Try the fish tacos. They are great.
Places to Eat off I-80/I-90/I-70
I-25 is definitely your best bet from Rapid City to Denver. In doing so, you'll go right through my current (and home-)town, Casper, WY. And....you'll want to keep on driving. There are some OK restaurants in my town, I suppose.
For good Mexican, try Don Juan's (on Center Street, which is one of the exits off I-25). They aren't your usual chain restaurant crap, you can get cheek, tongue, and brain tacos (although I don't!) and they are really reasonably priced.
If you feel like a nice Wild West steak, try the FireRock Steakhouse, which is off Hat Six Road. You'll want to take the last exit (to Wyoming Boulevard) and take a left on Second Street, then keep on going past the mall, past Home Depot...and about 3 minutes later it'll be on your right. It's pricey buy very good.
If you are going through here during the day, downtown Casper has the Cheese Barrel, the Cottage, the Market & More, and Gegi's, four low-key high-end lunch places that are tasty.
I got a job at a B&B and the boss thinks I can do this!
Make a nice citrus butter (I enjoy orange!) or buy/make some lemon or lime curd. I find this little zing of citrus to be better than a whole piece of fruit or glass of juice. And it's summer, so it'll be perfect!

I was going to give it to my aunt and uncle. They have goats at their house. I do live in Wyoming, so owning goats isn't that uncommon here lol. I had also heard that curried goat is good, so that is an option.

The meat processing plant called and asked how I'd like my goat, and I said "Don't kill it!" and they said "Too late, we already have. How would you like it?" And I told them to process it however they usually process a goat, and they said OK. So I have no idea.

Yikes. Tomatoes are my one food aversion I've never overcome. The idea of just eating a tomato sandwich to me is very yucky. I've tried everything, but I am just not a raw tomato eater.

There are many many great places to eat in Denver. Unfortunately, my favorite, Mel's, closed recently. There is a great variety of food in Denver as well, so don't look for only steaks! Another favorite is Solera, www.solerarestaurant.com.
Food Network, enough cakes already!!!
I 100% agree. My fiance and I don't watch too much anymore, but it seems like all the challenge shows we ever catch are cake-based (so we change it), or it's Bobby Flay throwing down with a cake baker, or Ace of Cakes, or whatever. I don't do cakes, they bore me. And I sure as hell don't want to see Bobby Flay baking cakes, I wanna see him do his thing. So yeah. It totally bugs.
Needed: a meal that would win a man's heart!

Healthy & Delicious: Grilled Zucchini with Quinoa Stuffing
This looks pretty tasty, although I admit to not being much of a fan of quinoa. I do something similar with plain old rice, from the Moosewood cookbook - Zucanoes
They are great with a red pepper puree.
