What do you do with your ground meat?

I found the secret to making White Castle or Krystal like sliders is to chop up and make a bed of onions then you put the hamburger pattie on the bed of onions and let it cook and steam. . White Castle doesn't turn the burgers.

I saw on Food Channel Easy Entertaining what I think makes the best meatballs I ever ate. You bake the meatballs in the oven in a pan with enough water that just the bottom of the meatball is covered in water. Cover the pan with foil. Bake for about 30 - 35 minutes at 375 degrees.

I make my meatballs with onions, breadcrumbs, egg, parsley, garlic powder,, parmesan cheese, salt, pepper and hint of fennel. I roll the meatballs in olive oil and breadcrumbs before sticking them in the pan.

I make Runza sometimes. Beef, onions, cabbage, salt and pepper all cooked in a pan.. You can wrap it in dough and bake or just put it on a bun. Adding cheese is good.

Cook the Book: 'Eat This!'

Luling City Market in Luling,Tx. on I-10 60 miles west of San Antonio. You buy brisket, sausage or ribs from smoke room in back on butcher paper with crackers, bread, peppers and onions.

You buy cheese, beans and drinks at the front.

I've never had barbecue sauce like it. I think it is mustard based.

What toppings would make your ultimate pizza?

I like pepperoni, italian sausage, and/or meatball, onions, green pepper and sometimes jalapenos, ham or bacon.

I like Barbecue Chicken (with or without onions and jalapenos)

The worst pizza I ever tasted was cold leftover shrimp and black olives. I didn't order it.

Houston, TX - Restaurant Suggestions, Anyone?

For real Mexican tacos served with a tray of 5 hot sauces (one was so hot I thought I was going to have to go the hospital and I thought I was tough) try Jarro Cafe on Gessner at I-10.

Champburger on Sampson east of Downtown in an industrial district makes great hamburgers and chicken fried steak sandwiches.

I like Pappas Bar-B-Q or Beef and Bun on Long Point (cheap sandwiches stuffed with meat and piles of my favorite french fries the owner hand cuts)

Try James Coney Island Hot dogs. Prince's Hamburgers are good. Both Houston favorites from 1920's and 30's.

Fajita Willies on Hwy 290 makes great burgers and fajitas.

You can't beat a What-A-Burger at any price.

Is Bahn Mi sandwich heaven? If not...what is sandwich heaven?

bahn mi is always delicious and usually extremely cheap. I never thought of eating carrots on a sandwich before. The Cilantro is so much tastier than lettuce.

Tortas are also heaven. A mexican sandwich on a big football shaped bun with refried beans, meat (i prefer the fajitas), guacamole, sour cream or crema, lettuce and tomatoes.

Where can I find Mex-Mex in Dallas, Texas?

Look for taquerias. They are kind of like Mexican diners.

I wish there was a ______ in my neighborhood....

Varsity Drive-In. I have to go there everytime I drive through Atlanta. Hot Dogs with pimento cheese and a chocolate shake.

What is your biggest food difference with your sweetheart?

She will not eat nuts. I love them. We can't make or buy any baked goods like brownies and cookies with nuts. Everything baked is better with nuts. She says it ruins it. She'll eat peanut butter but only creamy. I prefer crunchy. I add bacon bits or crumbled potato chips to make creamy crunchy.

I love jalapenos. She won't touch them. I love spicy stuff and lots of onions I really have to tone it down if she is going to be eating it.

I do get extra guacamole she takes off mexican food plates and I get extra pickles that they forget to leave off hamburgers.

Häagen-Dazs vs. Ben & Jerry's: Which Are You Down With?

Ben and Jerry's New York Super Fudge Crunch is my all-time favorite ice cream flavor. I buy it as a special treat. But, I live in Houston, Texas and the best ice cream in the world is BLUE BELL. (the little creamery in Brenham)

Which Plain Potato Chip Rules? What's Your Favorite?

Zapp's Crawtaters are fantastic. They are kettle cooked with cajun seasoning. Made in Gramercy, Louisiana. Emeril loves Zapp's potato chips.

What's Your Favorite Local Ice Cream?

Blue Bell Ice Cream is the best at any price. The Homemade Vanila cannot be touched. The local creamery in Brenham, Texas moved into the Houston market in the early 1970's and completely took it over. It has gradually inched out of Texas.
