My wife is a vegetarian. I am not. My wife works retail, which means at least one closing shift a week. These are "Meat Nights"! Bangers & Mash, Shepperd's Pie, Meatloaf, Pork Chops, Beef Stew, Buccatini All' Amatriciana...in other words, I make and honest-to-goodness meat centered meal with all of the trimmings. And wine.

Not sure if this a twist or not, but love to saute swiss chard (or kale). cannellini beans, tomatoes, garlic shallots in olie oil, add a splash of wine and a large pinch of pepper flakes, and serve over soft polenta. Dress the whole thing with a bit more extra virgin olive oil and Parm or romano.

Dinner Tonight: Ricotta Pancakes with Lemon Curd

Resolution: FAIL! Though all New Year resolutions are already a thing of the past, I had at least decided that this week I would NOT stop off at the store on the way home to pick up this or that ingredient for dinner, but would only use what I have in the house - until this recipe! DAMMIT! Who always keeps ricotta on hand?!!? Very light and tasty pancakes; and the curd was far easier than I thougt it would be....thanks
