Cookbook Recommendations Needed
don't bother with all the diet cookbook junk, simply use portion control and have him stop eating when he's full. people become fat as a result of how much they eat not what they eat.
How do you control your food cravings?
easy, i don't keep chocolate in the house.
Awkward Eating
i don't understand any of this message, why are you bothered by what other folks think about you? they probably didn't notice and if they did why in the hell are you worried about it?

Pork Shoulder
i agree with garvey, cook the roast at 225 for 12 hours, i plug it with garlic and cook it fat side up. if you cook it in a crock pot there is no where for the fat to go so it sits in grease.

Southern Food: What's the wierdest food you have tried?
in zoos all over the world, there is a description of the animal, habitat etc. on the cage, here in south louisiana there's a recipe on the cage.
Will N1H1 flu scare change your dining out habits?
i agree with pooch and some of you need to remember the hysteria that happened with the "bird flu pandemic'. the media is keenly aware that scared folks watch the news and they are going to keep the swine flu issue alive as long as stupid people are staying tuned in.
...Makes me think I've died and gone to heaven
any type of pork in my smoker or boiling shrimp or crawfish with lots of onions, corn, potatoes and mushrooms.
What is your "style" of cooking?
red neck, ain't nuthin better than a dead animal and fire.
What's for Dinner? 08/26
fried boudin balls as an appetizer followed by white beans/shrimp stew with large slabs of toasted garlic french bread. shrimp in south louisiana are the cheapest i've seen in years. just made a 3 hour roundtrip visit to st. bernard parish and bought 40 lbs of 15-20 count shrimp for $2.00 a pound.
Bad Shrimp
have lived in south louisiana for all of my 60 years and eat shrimp at least twice a week but have never used frozen shrimp. emilytaylor is correct about the orange stuff being fat but i'm also unsure about the cottage cheese thing and would not eat it. if you can't return it to the store don't throw it away, spoiled shrimp is one of the greatest fertilizers on earth, your plants will love it.
Who cares what famous people eat?
jeffrey dahmer was famous, did any of these high profile folks ever cook for him?
lunch box lunches for 5 yr. old
jerzeetomato is correct about reagrding the allergy thing, the peanut butter issue is akin to the MSG hysteria a few years ago.
Oysters - Is there a way to reduce the risk of getting sick?
i've harvested shrimp, oysters, crabs and just about anything that dwells in the gulf of mexico and the rivers and bayous of south louisiana, the "R" months go back to the days before refridgeration. if you become ill every time you eat them it ain't the oysters, it's your body.
WWII Homemaking Tips for Conservation
i remember my mom telling me that during the war they grew a victory garden in the medium on her street, i asked her if she was ever worried that someone would steal the vegetables they were growing, her reply was "of course no one would take them, the food doesn't belong to them".
WHAT A CONCEPT.
Collard greens
i never cook collard greens in water, i always use chicken stock or broth.
besides the ham hocks i also crumble up several strips of cooked bacon into, when they're done, put the entire dish into a collander and squeeze as much moisture out as possible, this helps with the sometimes bitter taste. down here you can a 30-90 day jail sentence if you serve greens without cornbread.
Dinner Tonight: Chicken Fried Steak with Cream Gravy
lorenzo, thank you so much for not calling me an "ignorant redneck" because i enjoy chicken fried steak, what a wonderfully forgiving bigot you are.
Any 'yall cooking with lard?
i wouldn't fry chicken in anything else and i've tried using healthier options but it just ain't the same. i also use it to season my cast iron pots.
What are you having for dinner tonight?
wookie, stop that right now, food is good for the brain, body and soul.
What size cast iron dutch oven?
get a 12 inch one, you can cook damn near anything in it except for a large turkey, a smaller may suffice many times but if you need to prepare a larger meal you'll need a 12 inch. to me it's kinda like buying a weapon, a 22 may be ok but a 44 magnum can be used for any defense issue.
Daisy May's rustic creamy corn with NY state cheddar
try making this with the ingredients that your mouth remembers, i use fresh corn or well rinsed canned, fry about 6 slices of bacon, crush the bacon then quickly saute the corn in the fat. i then transfer the corn and bacon into a pot and add sharp cheddar cheese. (leave the bacon fat where it is). don't have any idea as to what your looking for but the best way to learn to cook is to screw up a dish and then learn from it.
If I could eat anything right now, I'd pick _________.
chicken fried steak, cream gravy, mashed potatoes, sweet ice tea and warm pecan pie with homemade pecan/praline ice cream on top.
What do you make with your cast iron?
you won't go wrong with any of the above advice, my cast iron cookware is more than 100 years old and it will be around for my sons when i'm in the ground. my pots/pans have survived cooking in the fireplace, on the bbq pit and hurricane katrina. take care of them and they'll be around for your great, great, great grandchildren. (unless one of them decides that putting them in the dishwasher is the best way to clean them)
Do you have a recipe you won't share?
don't have a problem giving folks a recipe but when cooking stuff i don't know how to tell them how much or how long. i don't like being asked when the meal is going to be ready, when it's done, it's done.
Cooking Myths?
when in college 40 years ago i spent a summer working in a chicken processing plant, things may have changed but have some advice for you..WASH THE DAMN CHICKEN.
how to cook goat
thanks for the advice, not sure which way i'm gonna cook it but i'm buying some cut of goat on my next day off.
