i agree with garvey, cook the roast at 225 for 12 hours, i plug it with garlic and cook it fat side up. if you cook it in a crock pot there is no where for the fat to go so it sits in grease.

don't bother with all the diet cookbook junk, simply use portion control and have him stop eating when he's full. people become fat as a result of how much they eat not what they eat.

fried boudin balls as an appetizer followed by white beans/shrimp stew with large slabs of toasted garlic french bread. shrimp in south louisiana are the cheapest i've seen in years. just made a 3 hour roundtrip visit to st. bernard parish and bought 40 lbs of 15-20 count shrimp for $2.00 a pound.

have lived in south louisiana for all of my 60 years and eat shrimp at least twice a week but have never used frozen shrimp. emilytaylor is correct about the orange stuff being fat but i'm also unsure about the cottage cheese thing and would not eat it. if you can't return it to the store don't throw it away, spoiled shrimp is one of the greatest fertilizers on earth, your plants will love it.

i've harvested shrimp, oysters, crabs and just about anything that dwells in the gulf of mexico and the rivers and bayous of south louisiana, the "R" months go back to the days before refridgeration. if you become ill every time you eat them it ain't the oysters, it's your body.

Collard greens

i never cook collard greens in water, i always use chicken stock or broth.
besides the ham hocks i also crumble up several strips of cooked bacon into, when they're done, put the entire dish into a collander and squeeze as much moisture out as possible, this helps with the sometimes bitter taste. down here you can a 30-90 day jail sentence if you serve greens without cornbread.

What size cast iron dutch oven?

get a 12 inch one, you can cook damn near anything in it except for a large turkey, a smaller may suffice many times but if you need to prepare a larger meal you'll need a 12 inch. to me it's kinda like buying a weapon, a 22 may be ok but a 44 magnum can be used for any defense issue.

Daisy May's rustic creamy corn with NY state cheddar

try making this with the ingredients that your mouth remembers, i use fresh corn or well rinsed canned, fry about 6 slices of bacon, crush the bacon then quickly saute the corn in the fat. i then transfer the corn and bacon into a pot and add sharp cheddar cheese. (leave the bacon fat where it is). don't have any idea as to what your looking for but the best way to learn to cook is to screw up a dish and then learn from it.

What do you make with your cast iron?

you won't go wrong with any of the above advice, my cast iron cookware is more than 100 years old and it will be around for my sons when i'm in the ground. my pots/pans have survived cooking in the fireplace, on the bbq pit and hurricane katrina. take care of them and they'll be around for your great, great, great grandchildren. (unless one of them decides that putting them in the dishwasher is the best way to clean them)

don't have a problem giving folks a recipe but when cooking stuff i don't know how to tell them how much or how long. i don't like being asked when the meal is going to be ready, when it's done, it's done.
