Learning how to cook Indian cuisine -- both Southern (no meat) and Northern (with meat) -- like people in India do. Most Indian restaurants here just don't offer food that captures that same wonderful taste experience.

I like variations on the non-traditional pizza & toppings, too -- e.g., spinach, Hawaiian, etc. However, I'd also like to try what shellockjohn suggested above -- fig, gorgonzola, and arugula on a thin crust made in a wood burning oven. Sounds tasty!
Cook the Book: 'On the Line'
I do not have one particular favorite way of preparing seafood, but I do prefer the fish to be the the taste focus of the dish, with the other ingredients solely accenting and/or highlighting the fish. When recipes' other ingredients overpower and/or hide the seafood, the resulting dish is often disappointing.
