Dinner Tonight: Zucchini Galette

just finished making/eating this for dinner.
success! even the neighbors came over to try some.

instead of 4 zucchini, i used 2 medium zucchini and 2 big handfuls of fresh, chopped baby spinach, and also used 3 eggs instead of 2. and an 8 inch pan...improv at its most delicious.

best...open face....ever...

top a slice of rye (i like to butter it first) with thin sliced avacado and a slice of swiss cheese, salt, pepper.

pop in the oven until cheese is melty.

then do a dance because you just ate the best sandwich ever.

Worst Sandwich You've Ever Had

when i was young i remember eating butter and mayo sandwiches on white bread with my cousin. he was about 5 at the time (and vegetarian, by his parents choice) so that was basically all he would eat for lunch. sometimes there was some cucumber (for all the added flavor, ya know?). ha. it was freaking gross and i don't know why my parents made me eat it. luckily he lived far away and didn't come over for lunch often.

pizza! 3 of em...
1 with pizza sauce, mozz, yellow pepper, onion, mushroom, spinach
1 "mexican" style with fresh salsa, cheddar, jalepenos, onion, sour cream
1 plain-ish (used the odds and ends that were left over from the others)

i wish i made dessert pizza, but just made brownies instead.

the BK veggie burger (yum, yum, yum. probably coated in beef grease but it is good so whatever.)
those salty little packets of instant miso soup.
Qdoba nachos
sour cream and/or cream cheese on everything (this might not sound bad, but i put it on some weird things. soup? )
stouffer's frozen mac n' cheese (it is bomb.. its creamy goodness smells like a heart attack.)

Not Surprising: Vegans Have It Rough In Airports

i recently flew Continental from EWR to Heathrow and was surprised by the quality of the vegan meal i received--chana masla, basmati rice, palak paneer (no cheese, but tofu). it was not the best Indian food I've ever had, but it certainly exceeded my expectations. while everyone else received greasy chips and soda as a snack, I received an apple, a Clementine, crackers, and juice. Way to go, Continental.

Weird parental food preparation

my father--most likely the worst cook on the planet--was responsible for making my sisters and i lunch on Saturdays. his favorite concoction was fried bologna sandwiches with cheese and mayo. he was always so proud of his greasy concoction, but my sisters and i would secretly pray we would not die. the absolute worst was when he tried to make it with olive loaf...gross.
