Sunday Brunch: Potatoes Macaire

Sounds great...tomorrow's breakfast is taken care of!

Has anyone ever tried using left-over mashed potatoes, mixed with a beaten egg and a few spices, molded into a patty and fried on both sides in butter till crispy on the outside and creamy smooth on the inside? I sometimed stuff the center with cheese! Have no idea what's it's called...my mom used to make them for me. Obviously I'm a potato freak of the first order!

Slightly off-topic and certainly not gourmet, but I grew up on Swanson's frozen Chicken Pot Pies! That was my after school meal....and I loved those things. Tried one for old times sake...they taste just the same, although a bit lighter on the chicken and veggies and heavier on the gravy. Not what you want for your service, but a trip down memory lane.

Best Burger in the World at The Little Owl?

The burger shown is...dare I say it...too much meat? The burgers at "Island's"...a burger chain in the U.S. (mostly California and Florida) are quite good and, equally important, consistant. AND...their fries are endless and twice-fried! Very good on all counts! Bob

Reality Check: What's the New Pizza Hut Stuffed Crust Pan Pizza Like? We Try It

I started eating at Pizza Hut when I was living in Panama. Yep, we had them there...and they were exceptional. I moved back to the States a year ago and found the Pizza Hut pizzas here to be, in my estimation, terrible. Whereas in Panama they were truly excellent. Por que? Plus, the service here stinks.

Any comments on California Kitchen pizzas? I'mnot a fan, but everyone I know raves about them.

Mayo for cheeseburgers, mustard for regular hamburgers. Ketchup I reserve for meatloaf...I think the flavor is too strong for a good burger, but that is me. And yes, regional has a lot to do with the preferences. I would say I really like Miracle Whip on my cheeseburgers (being from the midwest), but that would probably stir up a storm of protests with the purists, so I won't. :)

Sorry, but cubed steak is NOT the same as round steak. Not to be argumentative, but to be authentic CFS, you have to buy a big slab of round steak, have the butcher run it through the tenderizer twice, cut the result into pieces, then proceed. Cubed steak is a pre-formed, frozen and, in my opinion, too thin piece of meat, often time formed from chopped up meat. I know this because my mmother used to worl for Wilson & Co. Meat Processing and cube steaks were one of their products.

Chicken Fried Steak is the official comfort food of both Texas and Oklahoma...simply the best dish ever. Cubed Steak???? Please!!! Sacrilege!!!! It has to be round steak put through a tenderizer at least twice. Mashed potatoes, cream gravy, a side of pinto beans and God'll move in and call it home! A cast iron skillet is almost mandatory, but it can be done with a modern skillet as long as it's heavy.

My family are all from the South and I was raised on endless streams of dishes from Savannah (mother), New Orleans (Father) and other relatives in Atlanta, Biloxi and Charlotte. A Rediscovered Beach Burger at Surfside Beach Shack in Nantucket

You can't put a price on nostalgia..especially when it comes to food. My grandmother's banana pudding with Vanilla Wafers made in an old Depression glass bowl that, I swear to God, somehow enhanced the flavor....a Theta Burger from the old, now closed, Split-T in Oklahoma City, etc. I'd gladly pay plenty of bucks to experience either one again.

I don't like these new malls...they seem too predictable and sterile. Sort of like Disneyland...everything meticulously planned out to the inth degree. The clunky Galleria across is the street doesn't try to be anything other than what it is...a big freaking shopping mall.
