couple suggestions...

i'll second kitkat's recommendation for the double tree cookies. they are phenomenal - and everyone will think you're a rockstar. that is, if you don't eat all the dough before you're done.

there's another 'thin mint' cookie i like to make that is a double chocolate cookie with a melted andes mint on top. fantastic! and the kids will love the green swirls on top. check out the recipe here.

just split the vanilla beans, scrape the seeds out and mix into sugar. fantastic treat!

i had this salad at coco pazzo cafe in chicago last summer...

arugula, fennel, watermelon, salt & pepper, and really good olive oil.

so spicy. so sweet. SO good!

great spring greens & spinach salad from bice grill in chicago. everything but the kitchen sink in it - chicken, garbanzo beans, navy beans, croutons, red onions, green beans, tomatoes, and so on. always delicious - and really can't be beat for about $5. for dessert, a triple chocolate cookie.

sprinkle the sliced sweet potatoes with grill seasonings & olive oil and roast for about an hour. throw in a couple potatoes and parsnips - absolutely delicious!

Healthy, College Budget Pasta Dish

this is sooo easy and super delicious - just cook a pound of pasta, add the juice and zest of one lemon, extra-virgin olive oil, flat-leaf parsley, salt & pepper, and top it all off with some parmesan cheese.
